There is nothing better then a chilled soup on a hot day and even though it is only May it is already pretty hot here. plus i really love the taste of fresh spring vegetables melded together.&lt;br /&gt;&lt;br /&gt;Gazpacho&lt;br /&gt;&lt;br /&gt;7 ripe hot house tomatoes&lt;br /&gt;1 clove garlic&lt;br /&gt;1/2 cucumber chopped&lt;br /&gt;1/2 red onion chopped&lt;br /&gt;1/2 green pepper chopped&lt;br /&gt;1/2 olive oil&lt;br /&gt;1-2 Tbs pomegranate red wine vinegar&lt;br /&gt;1 tsp curry powder&lt;br /&gt;1 tsp salt&lt;br /&gt;1 tsp Creole seasoning&lt;br /&gt;&lt;br /&gt;Blend 3 tomatoes, cucumber, onion, garlic, and green pepper. Then strain liquid in to bowl and discard solids. next blend remaining tomatoes, oil, vinegar, and spices and add to liquid. Chill for a few hours or overnight before serving.&lt;br /&gt;&lt;br /&gt;Avocado Relish&lt;br /&gt;&lt;br /&gt;2 avocados mashed&lt;br /&gt;2 Tbs medium salsa&lt;br /&gt;1/2 diced cucumber&lt;br /&gt;1 tsp lime juice&lt;br /&gt;&lt;br /&gt;mix all ingredients together. Chill until ready to serve soup. They were bland and and to loose. They were loaded with veggies and not inedible so not a total failure. On the bright side my mashed sweet potatoes topped with feta, dried cherries, and walnuts were a big hit with the family. I forgot how much i loved sweet potatoes but woke up with a craving for sweet potato casserole this morning. You know the one with the mashed potatoes topped with pecans, brown sugar, and butter crust. The &lt;span id="SPELLING_ERROR_0" class="blsp-spelling-error"&gt;ooey&lt;/span&gt; gooey sweet concoction that goes straight to the thighs. Well i have to say this was a lot healthier and really satisfied my craving.&lt;br /&gt;&lt;br /&gt;3 large sweet potatoes peeled and chopped&lt;br /&gt;2 Tbs Butter&lt;br /&gt;1/4 cup skim milk&lt;br /&gt;6 Tbs reduced fat feta crumbled&lt;br /&gt;6 Tbs dried cherries&lt;br /&gt;6 Tbs chopped walnuts or pecans&lt;br /&gt;&lt;br /&gt;Boil chopped potatoes until soft and fork tender. Drain potatoes and combine with butter and milk. Whip with hand mixer until smooth.
